One of those days

I wanted to plan a homemade dinner that was a favorite of my husband: chicken and broccoli potpie. I make everything from scratch, including the cheese soup and dough. To make the soup that goes in the pie, I need chicken broth. I didn't realise I didn't have any (and it was too late to make any) until i needed it. Shoot! I had already begun preparing the pie also, having cut up and cooked the chicken, prepared the broccoli, etc. I put everything in the fridge and will make that tomorrow...

So then I figured I'd make a honey and almond chicken recipe. Got the chicken thawed and prepared to brown it.... And realised I didn't have honey. Shoot again! I decided I'd marinate the chicken in italian dressing and grill it tomorrow for lunch.

I was successful at making more bread, though I wanted to make my whole wheat bread and then white bread for my husband. I only made the whole wheat bread when I realised I'dneed the oven for dinner and can't bake bread all evening. I'd love to have two ovens, for the amount of baking I do!

the one thing I *was* successful at doing was making a home made apple pie. A friend brought us some food a while ago that included pie dough I kept in the fridge. Upon getting it room temperature I realised it had a funky odor, and decided against using it and made my own. I am finding that processed foods all have weird odors compaired to home made, and I can't eat processed stuff much anymore!

So now my husband and I will enjoy some warm apple pie with ice cream.... yummmmm!

Saving Money

Our lease on our apartment is up in the fall - right after our baby is due. We are planning on moving out because our apartment is so small, we'd like to get into a house. We plan on staying in the country, and are seriously considering a move to Kentucky.

Either way, I've been inspired to save money. Everywhere. Considering when we go shopping, we only buy produce, meat, or things like butter, whole wheat flour, eggs and milk. We spend the most ofour money on produce. Right now I'm working on container gardening and am growing a variety of herbs and vegetables.

Our electric bill is a challenge. Each month I do different things and can't wait to see the results of my experiments. Last month we saved $40 on our electric bill by not running the dryer (I hang dry everything in our apartment), being vigilant about keeping lights off we are not using, starting to move our lightbulbs to the flourescent money saving variety, and turning things off at night that blink, show time (except the alarm clock in our bedroom), or otherwise use energy when they're not in use!

There is a lot more we do that I can't think of - but if you're looking for ideas maybe these will help get you started. :-)

I planted my herbs!

I am starting a herb garden consisting of sweet basil, oregano, parsley, rosemary, thyme, chives, peppermint, spearmint, lavendar, sage, and a few more I can't think of ;-) We have 144 little starter pellets seeded with 2-3 seeds each. When the weather warms up we will put them outside and keep them in containers. We will be buying our veggies and seed some and buy some already sprouted - we have to do container gardening this year because we live in an apartment, but we will make it happen! I am so excited to show my kids how plants grow, and let them experience the pure joy of eating your own home grown produce. I always loved that as akid, and can't wait to pass that on to my own! My daughter (3) helped seed those little starter pellets and they're all sitting in the sun in windows now.

I look forward to using fresh herbs in my food... I've never done that before! I'll also be drying some and storing them, maybe even giving some home grown and dried herbs as presents as special occasions come up!
